How about allowing us to have a Full Back to block for our Running backs , where the fullback can also catch passes for us and also they can get some carries for us.

The TE or OL is the best choice for this. They've not really taken any newer ideas recently.

You already can do that.
I use a TE at the FB spot in wishbone and send him where I need a blocker. He'll block automatically, just adjust his "route" on run plays in the strategy building. If you'd prefer a RB to do it, train the RB in Blocking and Receiving (and reception range, carry, some speed, etc.).
In theory, I could also do that in Pro Set, but my players aren't precise enough or fast enough for opposite edge run plays yet.
