How do you set how many you want to auction off your players for? When put my guys up auction they all start at zero? Is there a way to set a minimum that I am willing to accept

No way to set a minimum price. It is all about what others are willing to pay.

If not a "good" or "desired" player he may not be worth sending to auction as it costs 10 Auction points to do so.
